  1. Prep
    1. Preheat the oven to 220°C (425°F) and line a large baking sheet with parchment paper.
  2. 2. Stir the tomato sauce together with the dried oregano and garlic powder in a small bowl. Finely chop the zucchini, bell pepper, baby spinach and button mushrooms so they are tiny and easy to sprinkle, then set each in its own bowl for build-your-own toppings.
0.8 cup Tomato sauce (plain, no sugar added), 1 tsp Dried oregano, 0.5 tsp Garlic powder, 0.5 piece Zucchini, finely chopped, 0.5 piece Bell pepper, finely chopped, 1 cup Baby spinach, finely chopped, 4 piece Button mushrooms, finely chopped
  3. Assemble
    3. Place the whole-wheat pita breads on the baking sheet and brush the tops lightly with extra virgin olive oil. Bake for 3 minutes to crisp the base slightly so it does not turn soggy.
4 piece Whole-wheat pita breads (small, about 15 cm / 6 in), 1 tbsp Extra virgin olive oil
  4. 4. Let everyone build their own pizza: spread tomato sauce over each pita, scatter on the chopped vegetables, and finish with a generous layer of shredded mozzarella.
    1.5 cup Part-skim mozzarella, shredded
  5. Bake and Serve
    5. Bake for 8 to 10 minutes at 220°C (425°F) until the cheese is melted, bubbly and lightly golden at the edges. Rest for 2 minutes, tear the fresh basil leaves over the top, and slice into wedges to serve.
8 piece Fresh basil leaves (garnish)
