Cook the Filling
1. Heat the olive oil in a nonstick skillet over medium-high heat. Add the ground beef and cook, breaking it up, for 5 to 6 minutes until browned and cooked through.

2. Stir in the garlic, cumin, oregano, smoked paprika, half of the salt and the black pepper, and cook for 1 minute until fragrant.
3. Add the baby spinach and cook for 1 to 2 minutes until wilted. Transfer the mixture to a bowl and wipe out the skillet.

Make the Omelettes
4. Whisk the eggs with the remaining salt until fully combined. Melt half of the butter in the skillet over medium heat and pour in half of the eggs.

5. Stir gently with a spatula for 20 seconds, then let set for 1 to 2 minutes until the edges are firm and the top is just slightly wet.
6. Spoon half of the beef and spinach mixture and half of the feta cheese over one side of the omelette, fold the other side over, and cook for 30 seconds. Slide onto a plate.

To Serve
7. Repeat with the remaining butter, eggs, beef mixture and feta cheese. Sprinkle both omelettes with fresh parsley and serve immediately.
