  1. Make the Dough
    1. Whisk the all-purpose flour, cornstarch, baking soda, baking powder and salt together in a medium bowl and set aside.

  2. 2. In a large bowl, beat the softened butter with the light brown sugar and granulated sugar for 2 to 3 minutes until pale and fluffy.

  3. 3. Beat in the eggs one at a time, then the vanilla extract, until smooth and combined.

  4. 4. Add the dry mixture and stir on low speed or with a spatula until just combined with a few flour streaks remaining. Fold in the chocolate chips and chopped chocolate, taking care not to overmix.

    5. Scoop the dough into 18 large, tall mounds of about 90 g each and place them on a parchment-lined tray. Chill for at least 1 hour, or up to 24 hours, for thicker cookies with deeper flavor.

    6. Preheat the oven to 370°F (188°C). Arrange the chilled dough balls on parchment-lined baking sheets, spaced about 3 inches apart, without flattening them.
  7. 7. Bake for 14 to 17 minutes, until the edges are golden and the centers look soft and slightly underdone.
  8. 8. Cool on the baking sheet for 10 minutes so the centers set, then transfer to a wire rack. Serve warm or at room temperature.
