Mix the Base
1. In a large bowl, whisk together the rolled oats, Greek yogurt, milk of choice, chia seeds, honey, vanilla extract, ground cinnamon, fine sea salt and lemon zest until smooth and no dry pockets remain.
2 cup Rolled oats,
2 cup Plain Greek yogurt,
1.5 cup Milk of choice,
4 tbsp Chia seeds,
4 tbsp Honey,
2 tsp Vanilla extract,
0.5 tsp Ground cinnamon,
1 pinch Fine sea salt,
1 tsp Lemon zest
2. Let the mixture rest for 5 minutes, then stir again so the chia seeds distribute evenly and do not clump.
Assemble Jars
3. Divide half of the oat mixture among 4 jars or lidded containers, then add a layer of mixed berries to each. Top with the remaining oat mixture, pressing gently to level.
1 cup Mixed berries (fresh or frozen)
4. Scatter the remaining mixed berries over the top of each jar. If using frozen berries, they will thaw and release a light juice overnight.
1 cup Mixed berries (fresh or frozen)
Pack Topping
5. Portion the sliced almonds (topping) into 4 small containers, snack bags or jar lids so they stay crunchy, and pack them separately with each jar.
4 tbsp Sliced almonds (topping)
Chill and Serve
6. Seal the jars and refrigerate for at least 6 hours or overnight, up to 4 days. Stir lightly, sprinkle with the almonds and eat cold straight from the jar.
