    1. Preheat your oven to 175°C (350°F). Grease a standard 900g (2 lb) loaf tin and line it with baking parchment, leaving an overhang on the long sides for easy removal.
  2. 2. In a large bowl, mash the ripe bananas thoroughly with a fork until almost completely smooth — a few small lumps are fine for texture.

  3. 3. Melt the unsalted butter and let it cool slightly, then whisk it into the mashed banana along with the dark brown sugar, eggs, vanilla extract, and sour cream until well combined.

  4. Mix & Bake
    4. In a separate bowl, whisk together the plain flour, cocoa powder, baking soda, baking powder, salt, and instant espresso powder. The espresso powder deepens the chocolate flavour without adding a coffee taste.

  5. 5. Fold the dry ingredients into the wet mixture using a spatula until just combined — do not overmix. Fold in most of the dark chocolate chips, reserving a small handful to scatter over the top.

  6. 6. Pour the batter into the prepared loaf tin and smooth the top. Scatter the reserved chocolate chips over the surface. Bake for 55–65 minutes, until a skewer inserted into the centre comes out with just a few moist crumbs. Tent with foil after 40 minutes if the top is browning too quickly.
  7. Cool & Serve
    7. Remove the loaf from the oven and let it cool in the tin for 15 minutes, then lift out using the parchment overhang and transfer to a wire rack to cool completely before slicing — this sets the crumb and makes for clean slices.
