1. Trim the French beans and cut them into bite-sized pieces on a slight diagonal. Finely chop the onion, garlic, green chili, and cilantro. Halve the lime and set aside.

2. Roughly crush the roasted peanuts using a mortar and pestle or by sealing in a bag and bashing with a rolling pin until you have a mix of coarse pieces and finer crumbs.

3. Heat the peanut oil in a wide pan or wok over medium heat. Add the cumin seeds and mustard seeds and let them sizzle until fragrant and the mustard seeds start to pop.

4. Add the asafoetida and chopped onion. Sauté, stirring often, until the onion turns soft and lightly golden at the edges.

5. Stir in the chopped garlic and green chili. Cook for about a minute until the garlic loses its raw smell.

6. Add the French beans and salt. Stir to coat in the spices and aromatics, then sprinkle in the water. Cover the pan and cook, stirring occasionally, until the beans are bright green and just tender-crisp.

7. Uncover the pan. Add the ground turmeric, ground coriander, and red chili flakes. Stir-fry over medium-high heat until any remaining moisture evaporates and the beans pick up a light sear in spots.

8. Reduce the heat to low. Add most of the crushed peanuts, tossing well so they coat the beans and warm through for a minute.

9. Turn off the heat. Squeeze lime juice over the stir-fry and toss. Taste and adjust salt or lime as needed.

10. Transfer to a serving dish and top with the remaining crushed peanuts and chopped cilantro. Serve hot as a side or a light main.
