  1. Chimichurri
    1. Finely chop the parsley, oregano and 1 clove of garlic, then stir together in a bowl with 2 tablespoons of the olive oil, the red wine vinegar, red pepper flakes, lemon juice and a pinch of kosher salt. Let sit at least 15 minutes so the flavors meld.
    1 tsp Kosher salt, 2.0 tbsp Olive oil, 1.0 clove Garlic, 1 cup Fresh flat-leaf parsley, 1 tbsp Fresh oregano leaves, 1.5 tbsp Red wine vinegar, 0.2 tsp Red pepper flakes, 1 tsp Lemon juice
  2. Steak
    2. Pat the steak dry and season both sides with the kosher salt and black pepper. Let it stand at room temperature for 20 minutes.
    12 oz Sirloin or New York strip steak, 1 tsp Kosher salt, 0.5 tsp Black pepper
  3. 3. Heat a large skillet over high heat until smoking, add a splash of olive oil and sear the steak 3 to 4 minutes per side for medium-rare, until deeply browned. In the last minute, add the butter and spoon it over the steak. Transfer to a board and rest 8 minutes, leaving the drippings in the pan.

  4. Mushrooms and Eggs
    4. Slice the mushrooms and mince the remaining garlic. Cook the mushrooms in the steak pan over medium-high heat for 5 to 6 minutes until golden, then add the garlic and thyme and cook 1 minute more. Season with a pinch of salt and move to a plate.

  5. 5. Wipe the pan, add the remaining olive oil and heat over medium. Crack in the eggs and fry 2 to 3 minutes until the whites are set and the yolks are still runny, seasoning with salt and pepper.

  6. 6. Slice the steak against the grain and divide between plates with the mushrooms and fried eggs. Spoon the chimichurri generously over the steak and serve immediately.
