    1. Peel, pit, and roughly chop the peaches. Spread them in a single layer on a parchment-lined baking sheet and freeze for at least 2 hours until solid.

Add the Greek yogurt, honey, lemon juice, lemon zest, orange zest, citric acid powder, vanilla extract, peach schnapps or peach nectar, and salt. Blend until completely smooth and creamy, about 60–90 seconds. Taste and adjust honey or citric acid — it should taste bright, tangy, and intensely peachy, like a candy.
    2 cup Full-fat Greek yogurt, 0.3 cup Honey, 3 tbsp Fresh lemon juice, 1 piece Lemon zest, 1 piece Orange zest, 0.5 tsp Citric acid powder, 1 tsp Vanilla extract, 2 tbsp Peach schnapps or peach nectar, 1 pinch Pinch of salt
  3. Churning & Freezing
    3. Pour the blended mixture into an ice cream machine and churn according to the manufacturer's instructions, typically 20–25 minutes, until thick and soft-serve consistency.
  4. 4. If you don't have an ice cream machine, pour the mixture into a shallow freezer-safe container, cover, and freeze for 45 minutes. Stir vigorously with a fork or whisk to break up ice crystals. Repeat every 30–45 minutes for 3–4 cycles until creamy and scoopable.
  5. 5. Transfer the churned frozen yogurt to a freezer-safe container, press a sheet of plastic wrap directly against the surface to prevent ice crystals, seal, and freeze for at least 2 hours until firm enough to scoop.
  6. To Serve
    6. Remove the frozen yogurt from the freezer 5 minutes before serving to soften slightly. Scoop into bowls or cones and serve immediately. For an extra fizzy candy note, lightly dust each scoop with a tiny pinch of citric acid powder just before serving.
