Make Filling
1. Mash the avocado in a bowl until very smooth, then stir in the cream cheese, lime juice, olive oil and salt until creamy and fully combined.
1 piece Ripe avocado,
0.2 cup Full-fat cream cheese, softened,
1 tsp Lime juice,
1 tsp Extra virgin olive oil,
1 pinch Salt
2. Warm the tortillas for 10 seconds each in a microwave or dry pan so they are soft and pliable.
3 piece Soft flour tortillas (8-inch)
Assemble
3. Spread the filling evenly over each tortilla all the way to the edges, so the pinwheels stick closed.
4. Roll each tortilla up tightly into a log, wrap in plastic wrap and chill for 15 minutes to firm up for cleaner slicing.
Slice and Serve
5. Trim the ends and slice each log into 8 to 10 small pieces about 1 cm (0.5 inch) thick. For a 3-year-old, cut each pinwheel in half or quarters to keep pieces small and soft, and serve with supervision.
