Sear the Pork
1. Pat the pork chops dry and season both sides with salt, black pepper, smoked paprika and Italian seasoning.
4 pieces Boneless pork chops,
1 tsp Salt,
0.5 tsp Black pepper,
1 tsp Smoked paprika,
1 tsp Italian seasoning
2. Heat the olive oil in a large skillet over medium-high heat and sear the pork chops 2 minutes per side until golden. Transfer to the slow cooker.
1 tbsp Olive oil
Slow Cook
3. Whisk the garlic, chicken broth, heavy cream and cream cheese in a bowl until mostly smooth, then pour over the pork chops. Cover and cook on low for 4 hours (or high for 2 to 2.5 hours) until the pork is tender and reaches 145F (63C) internally.
6 clove Garlic,
0.5 cup Chicken broth,
1 cup Heavy cream,
2 oz Cream cheese
4. Remove the pork chops to a plate and tent with foil. Stir the Parmesan cheese into the sauce until melted and smooth, then stir in the spinach and cook on high for 5 to 10 minutes until wilted and the sauce thickens slightly.
1 cup Parmesan cheese, freshly grated,
5 oz Fresh baby spinach
Cauliflower Mash
5. While the sauce finishes, cut the cauliflower into florets and steam or boil for 10 to 12 minutes until very tender. Drain well and let the steam escape for 2 minutes.
1 piece Cauliflower
6. Blend or mash the cauliflower with the butter until smooth and creamy, and season with a pinch of salt and pepper if needed.
1 tsp Salt,
0.5 tsp Black pepper,
2 tbsp Butter
To Serve
7. Return the pork chops to the sauce to warm for 1 minute. Serve over the cauliflower mash, spoon the creamy garlic Parmesan spinach sauce on top and garnish with fresh parsley.
2 tbsp Fresh parsley (garnish)
