Crispy Bacon
1. Place the bacon rashers in a large cold skillet and set over medium heat. Cook, turning occasionally, for 6–8 minutes until deeply golden and crisp. Transfer to a paper-towel-lined plate to drain. Once cool, roughly chop or crumble into pieces. Pour off most of the bacon fat, leaving about 1 tablespoon in the pan.

Creamy Spinach
2. Return the skillet with reserved bacon fat to medium heat and add the butter. Once melted, add the finely minced shallot and cook for 2–3 minutes until softened and translucent.

3. Add the minced garlic and cook for 30 seconds until fragrant, stirring constantly so it doesn't burn.

4. Add the baby spinach in large handfuls, folding and stirring each addition until wilted before adding the next. This should take about 3–4 minutes in total. If there is excess liquid released by the spinach, increase the heat briefly and cook it off.

5. Reduce heat to medium-low. Add the cream cheese and stir until fully melted and incorporated into the spinach.

6. Pour in the heavy cream and stir to combine. Simmer gently for 3–4 minutes, stirring occasionally, until the sauce thickens and coats the spinach luxuriously.

7. Stir in the grated Parmesan and nutmeg. Season generously with salt and black pepper, tasting as you go. The bacon will add saltiness when served, so season accordingly.
