Roast Potatoes
1. Place a rack in the center of the oven and preheat to 425°F (220°C). On a large rimmed sheet pan, toss the baby potatoes with half of the olive oil, half of the kosher salt and half of the black pepper. Spread them cut-side down in a single layer and roast for 15 minutes.
2. While the potatoes roast, finely grate the zest of 1 lemon and squeeze 2 tablespoons of its juice into a small bowl. Mince the garlic and stir it into the bowl with the Dijon mustard, honey, half of the dill and a pinch of kosher salt to make a paste. Cut the second lemon into thin slices.
3. Toss the green beans in a bowl with the remaining olive oil, kosher salt and black pepper. Pat the salmon fillets dry with paper towels.
1.5 tbsp Extra-virgin olive oil,
1.5 tsp Kosher salt,
0.8 tsp Black pepper,
12 oz Green beans, trimmed,
4 piece Salmon fillets, skin-on
Roast Everything
4. Remove the pan from the oven and push the potatoes to the edges. Add the green beans in a single layer, then nestle the salmon fillets skin-side down among the vegetables. Spread the mustard-dill paste over the salmon and top each fillet with a lemon slice.
12 oz Green beans, trimmed,
4 piece Salmon fillets, skin-on,
2 piece Lemon
5. Return the pan to the oven and roast for 10 to 12 minutes at 425°F (220°C), until the salmon flakes easily and reaches 125-130°F (52-54°C) in the center and the green beans are tender and lightly blistered.
To Serve
6. Sprinkle the remaining dill over the salmon and vegetables and squeeze a little juice from the lemon slices over the pan. Serve straight from the sheet pan.
2 piece Lemon,
0.1 cup Fresh dill, chopped
