Prep Chicken
1. Heat the oven to 220°C (425°F) and line a baking sheet with parchment, setting a wire rack on top if you have one. Slice each chicken breast horizontally into 2 thin cutlets, then pound them to an even 1.5 cm (0.5 in) thickness and pat dry.

2. Mix the panko, Parmesan, garlic powder, oregano, salt and black pepper in a shallow dish. Whisk the eggs in a second dish.

Bake Chicken
3. Dip each cutlet in the egg, then press firmly into the panko mixture to coat both sides. Arrange on the prepared sheet and drizzle or spray evenly with the olive oil.

4. Bake for 10 minutes, flip, and bake another 8-10 minutes until golden, crisp and the chicken reaches 74°C (165°F) inside. Rest for 3 minutes, then slice into strips.
5. Warm the onion-free marinara sauce in a small pan or microwave until hot. Toss the chicken strips with half of it, then sprinkle the mozzarella over the strips and return to the oven for 2 minutes, until melted.

6. Warm the flour tortillas in a dry skillet or microwave for 15-20 seconds so they are pliable. Spread the remaining marinara sauce down the center of each, then top with the cheesy chicken, romaine lettuce and basil leaves.

7. Fold in the sides and roll up tightly. Slice in half and serve immediately while the chicken is still crisp.
