0.5 piece Yellow onion, finely diced
2 clove Garlic
1 tbsp Extra virgin olive oil
0.75 cup Crushed tomatoes
1 tbsp Tomato paste
1 tsp Dried oregano
0.5 tsp Fennel seeds, lightly crushed
0.75 tsp Salt
0.25 tsp Black pepper
0.75 cup Part-skim shredded mozzarella
8 piece Fresh basil leaves
2 tbsp Grated Parmigiano-Reggiano

Prepare Peppers
1. Preheat the oven to 200°C (400°F). Halve the bell peppers lengthwise through the stems, remove the seeds and membranes, and arrange cut side up in a baking dish. Bake for 10 minutes to soften slightly.

Make Filling
2. Heat the olive oil in a large skillet over medium-high heat. Cook the onion for 3 minutes until softened, then add the garlic and cook 30 seconds until fragrant.
3. Add the ground turkey, fennel seeds, salt and black pepper. Break the meat up and cook for 6-7 minutes until browned and cooked through.

4. Stir in the tomato paste, crushed tomatoes and oregano. Simmer for 5 minutes until thick, not soupy, then remove from the heat and tear in half of the basil.
5. Spoon the filling into the pepper halves, mounding it slightly. Top with the mozzarella and Parmigiano-Reggiano.

6. Bake at 200°C (400°F) for 15-18 minutes until the peppers are tender and the cheese is melted and bubbling. Rest 3 minutes, then top with the remaining torn basil and serve.
