1. Pat the steak dry and let it sit at room temperature for 20 minutes. Season both sides with the kosher salt, then press the crushed peppercorns firmly into both sides.

2. Warm 1 tbsp of the olive oil in a saucepan over medium heat. Sauté the garlic for 30 seconds until fragrant, then add the cannellini beans and the stock for the beans. Simmer for 8 minutes until the beans are very soft.

0.3 cup Chicken or vegetable stock (for beans)

3. Mash the beans with a fork or potato masher, or blend until silky, adding the lemon juice. Season with salt, then cover and keep warm over very low heat.

4. Steam the broccoli florets for 3 to 4 minutes until bright green and crisp-tender. Drain and keep warm.

5. Heat the remaining olive oil in a heavy skillet over high heat until just smoking. Sear the steaks for 3 to 4 minutes per side for medium-rare, adding 1 tablespoon of the butter in the last minute and basting. Rest the steaks on a board for 8 minutes.

6. Reduce the heat to medium and add the shallot to the same skillet, cooking for 1 minute. Remove from the heat, add the brandy, return to the heat and simmer until almost evaporated. Add the beef stock and Dijon mustard and reduce by half, about 4 minutes.

7. Stir in the heavy cream and the remaining butter and simmer for 1 to 2 minutes until glossy and coating a spoon. Season to taste with salt.

8. Spoon the white bean mash onto plates. Slice the steak against the grain and lay it over the mash, then spoon the peppercorn sauce on top and serve with the broccoli alongside.
