    1. Heat olive oil in a large pot over medium heat. Add yellow onion and cook until softened and lightly golden, about 6 to 8 minutes. Stir in garlic and cook for 30 seconds.

    3. Add pearled couscous and stir until well coated and lightly toasted, about 2 minutes.

  4. 4. Pour in crushed tomatoes and water, stir well, and bring to a boil. Reduce to low, cover, and simmer until the pearled couscous is tender and most of the liquid is absorbed, about 12 to 15 minutes.

    5. Turn off the heat and let the pearled couscous sit, covered, for 5 minutes. Add lemon juice and fresh parsley, then fluff gently and taste for seasoning before serving.
