Cook Pasta and Beans
1. Bring a large pot of water to a boil. Cook the small pasta 1 to 2 minutes beyond package directions until very soft, then drain and set aside.
1.5 cup Small pasta (ditalini or small elbow macaroni)
2. While the pasta cooks, mash the white beans with a fork, then press through a sieve or blend with a splash of the milk until completely smooth with no whole skins or chunks, as toddlers can choke on firm pieces.
1 can Canned white beans (cannellini), drained and rinsed,
1.5 cup Whole milk
Make Cheese Sauce
3. Melt the butter in the empty pot over medium heat. Whisk in the flour and cook 1 minute, stirring constantly, without letting it brown.
3 tbsp Unsalted butter,
3 tbsp All-purpose flour
4. Gradually whisk in the remaining milk and cook 4 to 5 minutes, stirring, until thickened and smooth enough to coat the back of a spoon. Reduce heat to low.
1.5 cup Whole milk
5. Stir in the cheddar, cream cheese, mustard powder and salt until melted and silky. Whisk in the mashed beans until fully blended.
1 can Canned white beans (cannellini), drained and rinsed,
1.5 cup Sharp cheddar cheese, freshly grated,
2 tbsp Cream cheese,
0.2 tsp Mustard powder,
0.5 tsp Salt
Combine and Serve
6. Fold the cooked pasta into the sauce and drizzle in the olive oil for extra calories. Loosen with a splash of milk if too thick.
1.5 cup Small pasta (ditalini or small elbow macaroni),
1.5 cup Whole milk,
1 tbsp Extra virgin olive oil
7. Let cool for 5 to 10 minutes until warm, not hot, and serve in small spoonfuls, checking that the pasta is soft and easy to squish.
