Peach Purée
1. Halve, pit, and roughly chop the peaches (no need to peel — the skin blends well and adds color). Add them to a blender with the lemon juice and simple syrup and blitz until completely smooth.
2. Pour the purée through a fine-mesh strainer into a large pitcher, pressing with a spoon to extract as much liquid as possible. Discard the solids. You should have about 1.5 cups of smooth peach purée.
Building the Batch
3. Add the peach schnapps and vodka to the pitcher with the peach purée. Stir to combine well. At this point the base can be refrigerated for up to 4 hours ahead of serving.

4. When ready to serve, fill the pitcher with ice and slowly pour in the prosecco, stirring very gently once or twice just to combine without losing too much fizz.

5. Pour into chilled wine glasses or champagne flutes and garnish each glass with a fresh mint leaf. Serve immediately.
