Mix & Assemble
1. Finely grate the mild cheddar cheese and finely slice the fresh chives. Set aside a small pinch of each for topping.
2.5 oz Mild cheddar cheese,
3 tbsp Fresh chives
2. In a medium bowl, combine the rolled oats, milk, chia seeds, Dijon mustard, smoked paprika, garlic powder, salt, and black pepper. Stir well so the mustard and spices are fully distributed.
3. Fold in most of the grated cheddar and most of the chives, reserving a little of each for topping. Stir until the cheese begins to soften slightly into the mixture.

4. Divide the mixture evenly between two cups or jars. Cover and refrigerate for at least 4 hours, or overnight, until the oats are fully softened and the mixture has thickened to a creamy, spoonable consistency.

5. When ready to serve, give each cup a good stir. Spoon the Greek yogurt on top of each cup, then finish with the reserved cheddar, chives, and an extra pinch of smoked paprika.
