1 tbsp Olive oil
1 piece Yellow onion, diced
3 clove Garlic, minced
1.25 lb Ground turkey
1.5 tbsp Chili powder
1 tsp Ground cumin
1 tsp Smoked paprika
1 tsp Dried Mexican oregano

1 can Canned black beans, drained and rinsed
1.5 cup Tomato salsa
9 oz Nacho cheese Doritos
2 cup Shredded Monterey Jack cheese
1 cup Shredded cheddar cheese
0.5 cup Mexican crema
1 piece Lime, juiced
0.25 cup Fresh cilantro, chopped (garnish)
1 piece Avocado, diced (garnish)

Make the Filling
1. Heat the oven to 180°C (350°F) and lightly grease a 9x13-inch baking dish. Warm the olive oil in a large skillet over medium-high heat, then cook the onion for 4 minutes until softened. Add the garlic and cook 30 seconds until fragrant.
2. Add the ground turkey and cook for 6-8 minutes, breaking it up, until browned and cooked through. Stir in the chili powder, cumin, smoked paprika, Mexican oregano and salt, and toast for 1 minute.
3. Stir in the black beans, tomato salsa and lime juice. Simmer for 5 minutes until slightly thickened, then remove from the heat.

Assemble and Bake
4. Lightly crush the Doritos in the bag, then spread half over the bottom of the baking dish. Top with half of the turkey mixture, then half of the Monterey Jack. Repeat with the remaining turkey mixture and Monterey Jack, then scatter the remaining Doritos on top and sprinkle with cheddar.

5. Bake uncovered at 180°C (350°F) for 15-20 minutes until the cheese is bubbly and the chip edges are crisp and golden. Rest for 5 minutes.
Serve
6. Drizzle the casserole with Mexican crema and top with cilantro and avocado. Serve hot.
