Make Meatballs
1. Heat the oven to 400°F (200°C). In a bowl, gently mix the ground turkey, breadcrumbs, half of the garlic (minced), oregano, smoked paprika, crushed fennel seeds, salt and black pepper until just combined. Roll into 16 meatballs.
2. Arrange the meatballs on a lined baking sheet and bake for 15 minutes until browned and cooked through. For batch prepping, cool and refrigerate them for up to 4 days.
Build the Sauce
3. Heat the olive oil in a large oven-safe skillet over medium heat. Cook the diced yellow onion for 5 minutes until soft, then add the remaining minced garlic and red pepper flakes and cook for 1 minute.
4. Pour in the crushed tomatoes, season lightly with salt, and simmer for 8 minutes until slightly thickened. Nestle the cooked meatballs into the sauce and warm for 3 minutes.

5. Make 6 small wells in the sauce between the meatballs and crack an egg into each. Cover and cook over medium-low heat for 6 to 8 minutes until the whites are set and the yolks are still soft.

6. Crumble the feta over the skillet, sprinkle with parsley, and serve hot straight from the pan.
