  1. Burger Sauce
    1. In a small bowl, whisk together the mayonnaise, ketchup, yellow mustard, pickle brine, garlic powder, smoked paprika, and cayenne pepper until smooth and uniform. Taste and adjust seasoning. Cover and refrigerate until ready to serve — the sauce improves as it sits.
    0.2 cup Mayonnaise, 2 tbsp Ketchup, 1 tsp Yellow mustard, 1 tbsp Pickle brine, 0.2 tsp Garlic powder, 0.2 tsp Smoked paprika, 1 pinch Cayenne pepper
  2. Cucumber Prep
    2. Slice the cucumbers into thick rounds, about 1.5 cm (just over half an inch) thick. Pat them dry thoroughly with paper towels and arrange on a serving platter. Set aside.

  3. Smash Burger Patties
    3. Divide the ground beef into 12 equal balls of approximately 37g each. Do not overwork the meat — a loose, shaggy ball is perfect. Season each ball generously with kosher salt and black pepper on all sides.

  4. 4. Heat a cast iron skillet or heavy griddle over high heat until screaming hot, about 3–4 minutes. Add the neutral oil and swirl to coat. Working in batches of 3–4, place a beef ball in the pan and immediately smash it flat with a sturdy spatula or the bottom of a small heavy pan, pressing firmly for 5–10 seconds until it's as thin as possible. Cook undisturbed for 2–2.5 minutes until the edges are deeply browned and lacy.

  5. 5. Flip each patty, immediately lay a slice of American cheese on top, and cover with a lid or metal bowl for 45–60 seconds to melt the cheese. Remove from the pan and rest on a wire rack. Repeat with remaining beef balls.

  6. Assembly
    6. Spoon a small dollop of burger sauce onto each cucumber round. Place a smashed cheesy patty on top, add a dill pickle chip or two, and finish with a sprinkle of fresh chives. Serve immediately while the patties are hot against the cool, crunchy cucumber.
