1. Peel the russet potatoes and cut into 2.5 cm (1 inch) chunks. Place in a pot, cover with cold water, add 1 tsp of the kosher salt, and bring to a boil. Simmer 15 minutes until very tender.

2. Drain the potatoes well and return to the warm pot for 1 minute to steam off moisture. Mash with 3 tbsp of the unsalted butter and the whole milk (warmed) until creamy, season with salt, and cover to keep warm.

3. Preheat the oven to 230°C (450°F). Cut the broccoli into florets, toss with the olive oil and 0.5 tsp kosher salt, and spread on a baking sheet. Roast 15 to 18 minutes until the edges are charred and crisp.

4. Pat the steak dry and season all over with the remaining kosher salt and the black pepper. Heat a cast iron skillet over high heat until smoking. Sear the steaks 3 to 4 minutes per side for medium-rare, or until an internal temperature of 54°C (130°F) is reached. Transfer to a plate and rest 8 minutes.

5. Pat the shrimp dry and toss with the smoked paprika. Reduce the skillet heat to medium-high, add 1 tbsp of the unsalted butter, and cook the shrimp 1 to 2 minutes per side until pink and opaque. Remove to the plate with the steak.

6. Lower the heat to medium and add the remaining 2 tbsp unsalted butter, the minced garlic, and thyme. Cook 30 to 45 seconds until fragrant but not browned, then squeeze in the lemon juice and stir. Return the steak and shrimp to the pan and baste in the garlic butter for 30 seconds.

7. Slice the steak against the grain. Serve with the mashed potatoes and charred broccoli, spoon the pan garlic butter over the steak and shrimp, and garnish with the fresh parsley.
