Prep Steak
1. Pat the sirloin steak dry with paper towels, then season all over with a pinch of salt and black pepper.

Cook Steak
2. Heat olive oil in a skillet over medium-high heat until hot, then add the steak and sear on each side until cooked to your preferred doneness, about 3 to 4 minutes per side for medium. Transfer to a plate to rest and cool slightly.

3. While the steak rests, trim the ends from the celery stalks, then cut them into 8 even lengths. Slice each piece lengthwise to create shallow “boats,” and use a small knife to shave off any very rounded bottoms so they sit flat. Halve the cherry tomatoes, remove the seeds if very juicy, then finely chop the flesh.

Make Filling
4. Finely chop the cooled steak into tiny pieces, then place it in a bowl with the sweetcorn, chopped cherry tomatoes, plant-based mayonnaise, lemon juice, garlic powder, remaining salt, and black pepper. Stir until everything is well combined and the mixture is creamy but still spoonable; adjust seasoning to taste.
