Slow Cook Chicken
1. Slice the yellow onion thinly and scatter it across the bottom of a 6-quart slow cooker. Lay the chicken breasts on top.
2. In a bowl, whisk together the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, yellow mustard, smoked paprika, garlic powder, onion powder, cayenne pepper, salt and black pepper. Pour the sauce over the chicken.
1 cup Ketchup,
0.2 cup Apple cider vinegar,
0.3 cup Brown sugar,
2 tbsp Worcestershire sauce,
1 tbsp Yellow mustard,
2 tsp Smoked paprika,
1 tsp Garlic powder,
1 tsp Onion powder,
0.2 tsp Cayenne pepper,
1 tsp Salt,
0.5 tsp Black pepper
3. Cover and cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours, until the chicken is very tender and reaches at least 165F (74C) inside.
Shred and Sauce
4. Shred the chicken directly in the slow cooker with two forks and stir it through the sauce. Cover and cook on LOW for 20 more minutes so it absorbs the flavors. Stir in a splash more vinegar or a pinch of sugar if you want to adjust the balance.
Slaw and Assembly
5. While the chicken finishes, toss the coleslaw mix with the mayonnaise, apple cider vinegar and sugar until evenly coated. Season with a pinch of salt and chill until needed.
4 cup Coleslaw mix,
0.3 cup Mayonnaise,
1 tbsp Apple cider vinegar (for slaw),
1 tsp Sugar (for slaw)
6. Butter the cut sides of the hamburger buns and toast them in a hot skillet over medium heat for 1 to 2 minutes until golden.
