  1. Sauté the Vegetables
    1. Sauté the diced bell pepper, medium cooking onion, celery stalks, and minced garlic in oil over medium-high heat until softened.
    1 piece bell pepper, 1 piece cooking onion, 3 piece celery stalks, 3 clove garlic cloves, minced, 1 tbsp cooking oil
  2. Cook the Sausage
    2. Poke holes in the sausages and cook in the air fryer at 375°F for 15 minutes, or until cooked through. Slice once cooked.

  3. Sauté the Vegetables
    3. Add paprika, cayenne, thyme, oregano, salt, and pepper to the softened vegetables and cook for 1–2 minutes to bloom the spices.
    1 tbsp paprika, 0.2 tsp cayenne pepper, 1 tsp dried thyme, 2 tsp dried oregano, 1 tsp salt, 0.5 tsp black pepper
  4. Cook the Couscous
    4. Add the stock, strained tomatoes, and pearled couscous to the vegetable mixture. Stir and cover, then cook over medium heat, stirring occasionally, for 8–10 minutes until the liquid has been absorbed.

  5. 5. Toss in the sliced sausage and garnish with sliced de-seeded jalapeños before serving.
