Prep
1. Preheat the oven to 190°C (375°F). Bring a large pot of generously salted water to a boil and cook the elbow macaroni for 2 minutes less than the package directions so it stays slightly firm. Drain well.
340 g Elbow macaroni,
1.5 tsp Salt
Cheese Sauce
2. In the same pot over medium heat, melt 3 tablespoons of the unsalted butter. Whisk in the all-purpose flour and cook, whisking constantly, for 1 minute until bubbling and pale golden.
3 tbsp Unsalted butter,
3 tbsp All-purpose flour
3. Slowly pour in the whole milk, whisking constantly to prevent lumps. Simmer gently, stirring, for 5 to 7 minutes until the sauce coats the back of a spoon.
3 cup Whole milk
4. Remove the pot from the heat. Stir in the sharp cheddar cheese in three additions until smooth and silky, then season with mustard powder, cayenne pepper, salt and black pepper.
7. Bake for 25 minutes at 190°C (375°F) until the sauce is bubbling and the topping is deep golden and crisp. Rest for 5 minutes before serving so the sauce sets slightly.
