  1. Cook the Beef
    1. Heat olive oil in a large skillet or sauté pan over medium-high heat. Add the diced onion and green bell pepper and cook, stirring occasionally, for 4–5 minutes until softened and lightly golden.

  2. 2. Add the minced garlic and cook for 30 seconds until fragrant. Push the vegetables to the side of the pan, then add the ground beef. Break it up with a wooden spoon and cook for 5–6 minutes until browned all over. Drain any excess fat if needed.

  3. Build the Sauce
    3. Add the tomato paste directly into the beef mixture and stir to coat. Cook for 1 minute to caramelize the paste slightly. Then add the ketchup, Worcestershire sauce, brown sugar, apple cider vinegar, Dijon mustard, smoked paprika, and chili powder. Stir everything together well.
    2 tbsp Tomato paste, 0.5 cup Ketchup, 1 tbsp Worcestershire sauce, 1 tbsp Brown sugar, 1 tbsp Apple cider vinegar, 1 tsp Dijon mustard, 0.5 tsp Smoked paprika, 0.5 tsp Chili powder
  4. 4. Pour in the beef broth and stir to combine. Reduce the heat to medium-low and simmer uncovered for 10–12 minutes, stirring occasionally, until the sauce has thickened and clings to the meat. Season generously with salt and black pepper to taste.

  5. Assemble & Serve
    5. Lightly toast the burger buns cut-side down in a dry pan over medium heat for 1–2 minutes until golden. Spoon a generous heap of the sloppy joe mixture onto the bottom bun, place the top bun on, and serve immediately.
