Watermelon Juice
1. Add the fresh watermelon chunks to a blender and blend until completely smooth, about 20–30 seconds. Strain through a fine mesh sieve into a measuring jug, pressing down to extract all the juice. Discard the pulp.

Build the Cocktail
2. Fill a cocktail shaker with ice. Add the mezcal, fresh lime juice, agave syrup, a pinch of flaky sea salt, and 4 oz of the strained watermelon juice. Shake vigorously for 15 seconds until well chilled.

3. Fill two tall glasses generously with ice. Strain the cocktail mixture evenly between the two glasses, then top each with sparkling water. Gently stir once to combine without losing the fizz.

4. Garnish each glass with a small watermelon slice on the rim and a fresh mint sprig tucked alongside. Serve immediately.
