    1. Cut the beef chuck into roughly 4 cm (1.5-inch) cubes and pat completely dry with paper towels. Season generously with salt and black pepper on all sides. Dice the white onion, mince the garlic and fresh ginger, and roughly chop the tomato. Set aside.

  2. Sear & Build Aromatics
    2. Heat the neutral oil in a heavy pot or Dutch oven over high heat until shimmering. Sear the beef in a single layer without crowding, undisturbed, for 3–4 minutes per side until a deep brown crust forms. Work in batches if needed. Remove seared beef and set aside.

  3. 3. Reduce heat to medium. Add the diced onion to the same pot and cook, stirring occasionally, for 3–4 minutes until softened and translucent. Add the garlic and ginger and cook for 1 minute until fragrant. Stir in the smoked paprika and sweet paprika and cook for 30 seconds, letting them bloom in the oil.

  4. 4. Add the chopped tomato to the pot and stir well, scraping up any browned bits from the bottom of the pot as the tomato releases its juices. Cook for 2–3 minutes until the tomato begins to break down and soften into the aromatics.

    5. Return the seared beef to the pot along with any resting juices. Pour in the chicken broth, stir to combine, and bring to a gentle boil. Reduce heat to low so the liquid is at a bare simmer — just a few lazy bubbles. Cover with a lid and cook for 1 hour 30 minutes.

  6. 6. Cut the carrots into 2 cm rounds and the potatoes into roughly 3 cm chunks. After the beef has simmered for 1 hour 30 minutes, add the carrots and potatoes to the pot. Stir, re-cover, and continue simmering for a further 45 minutes, until the vegetables are tender and the beef is fork-tender (a fork should twist in easily). Taste and adjust seasoning with salt and black pepper before serving.
