  1. Honey Syrup
    1. Make a quick honey syrup by combining equal parts honey and warm water in a small bowl or jar. Stir until fully dissolved, then set aside to cool. This can be made ahead and stored in the fridge.
    1 oz Honey syrup
  2. Peach Purée
    2. Pit the fresh peach and roughly chop the flesh. Muddle or blend it to a smooth purée — a fork works well if the peach is very ripe. You should have about 3 tablespoons of purée.
    1 piece Fresh ripe peach
  3. Build the Cocktail
    3. Divide the peach purée evenly between two cocktail shakers or one large shaker. Add the mezcal, fresh lemon juice, honey syrup, and peach bitters. Fill with ice and shake vigorously for 15–20 seconds until well chilled.
    3 oz Mezcal, 1.5 oz Fresh lemon juice, 1 oz Honey syrup, 4 piece Peach bitters, 2 cup Ice
  4. 4. Double-strain through a fine mesh strainer into two tall glasses filled with fresh ice. Top each glass with sparkling water, pouring gently to preserve the fizz. Give a gentle stir to incorporate. Garnish each glass with a peach slice and a sprig of fresh mint.
