  1. Prep
    1. Pat the steak dry and season both sides with salt and black pepper. Cut the broccoli into small florets, trim the asparagus and cut into 2 inch (5 cm) pieces, mince the garlic, slice the chilies and thinly slice the shallot.
    12 oz Sirloin steak, 1 head Broccoli, 1 bunch Asparagus, 4 clove Garlic, 3 piece Red Thai chilies, 1 piece Shallot, 0.5 tsp Salt, 0.5 tsp Black pepper
  2. 2. Stir together the fish sauce, brown sugar and oyster sauce in a small bowl until the sugar dissolves. Set aside.

  3. Sear and Stir-Fry
    3. Heat 1 tablespoon of the neutral oil in a large skillet or wok over high heat until smoking. Sear the steak 3 to 4 minutes per side for medium-rare, then transfer to a board to rest for 5 minutes.

  4. 4. Return the pan to high heat with 2 tablespoons of the neutral oil. Stir-fry the broccoli for 2 minutes, then add the asparagus and water and cook 2 to 3 minutes more until bright green and crisp-tender.

  5. 5. Push the vegetables aside, add the garlic, chilies and shallot, and stir-fry for 30 seconds until fragrant. Pour in the sauce and toss for 1 minute until glossy and coating the vegetables.
    4 clove Garlic, 3 piece Red Thai chilies, 1 piece Shallot, 2 tbsp Fish sauce, 1 tbsp Brown sugar, 1 tbsp Oyster sauce
  6. Finish and Serve
    6. Remove the pan from the heat and toss in the Thai basil leaves until just wilted. Slice the rested steak against the grain and arrange over the vegetables. Squeeze lime juice over everything just before serving.
