Prep and Season
1. Heat the oven to 425°F (220°C) and line two rimmed baking sheets with parchment. Pat the catfish fillets very dry with paper towels.
4 pieces Catfish fillets
2. Mix the paprika, garlic powder, onion powder, salt and black pepper in a small bowl. Place the catfish fillets on one sheet, brush with half of the olive oil, and sprinkle the spice mix evenly over both sides.
3. Toss the broccoli florets with the remaining olive oil and a pinch of salt from the spice mix, then spread them on the second sheet.
4 cup Broccoli florets,
1.5 tbsp Olive oil,
1 tsp Salt
Bake
4. Slice one lemon into thin rounds and lay a few over the catfish. Bake the catfish and broccoli together for 15 to 18 minutes, until the fish flakes easily with a fork (internal temperature 145°F/63°C) and the broccoli edges are lightly browned.
1 pieces Lemon
Sauce and Serve
5. While the fish bakes, zest and juice half of the remaining lemon into a bowl. Stir in the Greek yogurt and honey until smooth, then season with a pinch of salt.
6. Serve the catfish hot with the broccoli and a bowl of the yogurt-lemon sauce for dipping. Garnish with fresh parsley and squeeze over lemon from the remaining half if desired.
0.5 pieces Lemon,
1 tbsp Fresh parsley (garnish)
