  1. Prep
    1. Cut the cherry tomatoes into halves or quarters. Roughly chop the fresh basil or coriander if using.

  2. 2. In a small bowl whisk the eggs with the milk, salt, black pepper and dried oregano or mixed Italian herbs until smooth and slightly frothy.

  3. Cook Eggs
    3. Heat a nonstick pan over medium-low heat and add the butter and olive oil. Once melted and warm, pour in the egg mixture and cook gently, stirring often, until just set but still soft and creamy, then remove from the heat.

  4. 4. Stir the sweet corn kernels into the soft scrambled eggs, then taste and adjust seasoning if needed.

  5. Toast Base
    5. Lightly toast the whole wheat bread slices in a toaster or dry pan until golden on both sides.

  6. Assemble & Finish
    6. In a small bowl mix the ketchup with the honey or maple syrup to make a lightly sweet sauce, then spread a thin layer over each toast slice.

  7. 7. Spoon the corn-egg mixture evenly over the sauced toast slices. Sprinkle with grated mild cheese if using, then top with cherry tomato pieces, pressing them lightly into the eggs so they stick.

  8. 8. If you would like the cheese melted and the tops lightly set, place the toasts on a tray and broil or grill on high for 2 to 3 minutes, watching closely. Remove and garnish with fresh basil or coriander, then serve warm.
