  3. 3. In a separate bowl whisk the yogurt, milk, egg, and oil until smooth and emulsified.

  4. 4. Pour the wet mixture into the dry ingredients and whisk gently just until you get a thick, smooth batter with no dry pockets; if it feels too thick, loosen it with a little water to reach a heavy pourable consistency.

  5. Fold In Add-ins
    5. Fold the chopped spinach, cilantro, green chili, ginger, onion, grated cheddar cheese, and grated mozzarella cheese into the batter until evenly distributed, then let the batter rest for 10 minutes while you heat the waffle iron.
