Mix & Refrigerate
1. In a medium bowl or large jar, whisk together the Greek yogurt, skim milk, cocoa powder, maple syrup, vanilla extract, and a pinch of salt until the cocoa is fully dissolved and the mixture is smooth with no lumps.

2. Add the rolled oats and stir well to combine, making sure all the oats are fully coated in the chocolate mixture.

3. Divide the mixture evenly between two jars or airtight containers. Seal and refrigerate for at least 6 hours, or overnight (up to 24 hours). The oats will absorb the liquid and thicken into a creamy, pudding-like consistency.
To Serve
4. When ready to eat, give the oats a good stir. If they seem too thick, loosen with a splash of skim milk. Top with dark chocolate chips and serve cold straight from the fridge.
