  1. Overnight Oats Base
    1. In a large mixing bowl or directly in two jars, combine the rolled oats, milk, Greek yogurt, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and ground ginger. Stir well until fully combined.
    1 cup Rolled oats, 1 cup Milk, 0.5 cup Greek yogurt, 2 tbsp Maple syrup, 1.5 tsp Ground cinnamon, 0.2 tsp Ground nutmeg, 0.2 tsp Ground ginger, 1 tsp Vanilla extract
  2. 2. Peel and coarsely grate one apple directly into the oat mixture. Add the lemon juice and a pinch of salt, then stir to combine. Divide evenly between two jars or bowls, cover, and refrigerate overnight or for at least 6 hours.

  3. Crumble Topping
    3. When ready to serve, make the crumble topping. Melt the butter in a small skillet over medium heat. Add the crumble oats, chopped walnuts, and brown sugar. Toast, stirring frequently, for 3–5 minutes until golden and fragrant. Transfer to a plate and allow to cool and crisp up for a few minutes.
    1 tbsp Brown sugar, 0.3 cup Rolled oats (for crumble topping), 3 tbsp Walnuts, roughly chopped, 1 tbsp Unsalted butter
  4. Assembly & Serving
    4. Dice or thinly slice the remaining apple and toss with a little extra cinnamon if desired. Remove the oats from the fridge and stir — they should be thick and creamy. Top each portion with fresh apple slices and a generous spoonful of the warm or room-temperature crumble topping. Serve immediately.
