1. Soak the Pad Thai rice noodles in room-temperature water for 25 to 30 minutes until flexible but not fully soft. Drain well. Slice the chicken breast into thin bite-size pieces and mince the garlic.

3. Heat a large skillet or wok over medium-high heat. Add the vegetable oil, then cook the chicken breast for 4 to 6 minutes, stirring often, until lightly golden and cooked through. Add the garlic and cook for 30 seconds until fragrant.
