Roast Tomatoes
1. Heat the oven to 220°C (425°F). Toss the cherry tomatoes and unpeeled garlic cloves with half the olive oil, half the salt, and the chili flakes on a rimmed baking sheet.
600 g Cherry tomatoes,
4 clove Garlic cloves,
2 tbsp Extra virgin olive oil,
0.8 tsp Salt,
0.2 tsp Chili flakes
2. Roast for 20 to 25 minutes until the tomatoes burst and caramelize at the edges. Squeeze the garlic from its skins and mash it into the tomatoes.
Cook Chicken
3. Slice each chicken breast horizontally into thin cutlets, then cut into bite-size strips. Season with the remaining salt, black pepper, and dried oregano.
4. Heat the remaining olive oil in a large deep skillet over medium-high heat. Sear the chicken for 5 to 6 minutes, turning, until golden and cooked through to 74°C (165°F). Reduce the heat to low.

Pasta and Toss
5. Meanwhile, boil the dried penne or rigatoni in a large pot of water with the salt for pasta water until al dente, about 1 to 2 minutes less than the package directions. Reserve 1 cup of the starchy pasta water, then drain without rinsing.

6. Add the roasted tomatoes and garlic with their juices to the chicken, then add the pasta and about 120 ml of pasta water. Toss over medium heat for 1 to 2 minutes until the sauce clings to the pasta, adding more pasta water as needed.
Finish and Serve
7. Remove from the heat and stir in the lemon juice and Parmigiano-Reggiano. Tear in the fresh basil leaves, toss briefly, and serve immediately.
