Assemble the Bake
1. Grease a 9x13-inch baking dish generously with the softened butter. Arrange half of the English muffin pieces in an even layer across the bottom of the dish.

2. Scatter half of the Canadian bacon, half of the scallions and half of the cheddar over the muffins. Repeat with the remaining muffin pieces, Canadian bacon and scallions, then reserve the remaining cheddar for the top.

Egg Custard
3. In a large bowl, whisk the eggs with the milk, Dijon mustard, smoked paprika, black pepper and salt until fully combined and no streaks of yolk remain.

4. Pour the egg mixture evenly over the layered muffins, pressing down gently so every piece is soaked. Top with the reserved cheddar, cover tightly and refrigerate at least 4 hours or overnight.

Bake and Serve
5. Heat the oven to 350°F (175°C). Remove the dish from the refrigerator and let it sit on the counter for 20 minutes while the oven heats.
6. Bake uncovered for 45 to 50 minutes, until the center is set, no liquid jiggles when shaken, and the top is golden brown. Tent with foil if the cheese browns too quickly.
7. Rest for 10 minutes, then sprinkle with chives, cut into squares and serve. Leftovers keep refrigerated for 4 days and reheat in the microwave for 1 to 2 minutes per portion.
