Batter
1. Add the eggs, milk, flour, protein powder, sugar, baking powder, and salt to a blender. Blend on medium speed for about 20–30 seconds until completely smooth. Let the batter rest for 2 minutes — this allows the baking powder to activate slightly and the batter to thicken a little.

Cook the Pancakes
2. Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter. Once hot, pour roughly a quarter of the batter per pancake onto the pan. Cook for about 2–3 minutes until bubbles form on the surface and the edges look set, then flip and cook for a further 1–2 minutes until golden. Repeat with remaining batter.

3. Stack the pancakes and serve immediately. Top with fruit, a drizzle of honey, or yoghurt if desired.
