1. Mince the garlic. In a bowl, whisk the garlic with orange juice, lime juice, olive oil, cumin, Mexican oregano, paprika, turmeric and 1.5 teaspoons of the kosher salt.

2. Add the chicken thighs, turn to coat, cover and refrigerate for at least 2 hours, up to 8 hours. Do not marinate longer, as the citrus will turn the meat mushy.

3. Dice the tomatoes and finely dice half of the white onion. Mince the jalapeño and chop the cilantro. Toss together with the juice of 1 lime and the remaining 0.5 teaspoon salt. Rest 15 minutes so flavors meld.

4. Dice the remaining onion. Heat the vegetable oil in a saucepan over medium heat, add the rice and half the diced onion, and toast for 3 minutes until golden. Add the chicken broth, bring to a boil, cover, reduce to low and cook 15 minutes. Rest off heat, covered, for 5 minutes, then fluff.

5. Warm the black beans with their liquid in a small pot over medium-low heat for 5 minutes, mashing a few beans to thicken. Season with a squeeze of the remaining lime.

6. Set up a two-zone grill: heat one side to high direct heat (about 230C / 450F) and leave the other side without heat. Remove chicken from the marinade and pat the skin fairly dry, discarding the marinade.

7. Sear the chicken skin-side down over direct heat for 4 to 5 minutes until charred and golden, then flip and sear 3 minutes. Move to the cool zone, close the lid, and cook 15 to 20 minutes until the internal temperature reaches 74C (165F). Move away from flames if flare-ups occur.

8. Rest the chicken 5 to 10 minutes. Serve with the rice, beans and fresh salsa.
