  1. Garlicky Tomato Sauce
    1. Warm the olive oil in a small saucepan over medium-low heat. Thinly slice the garlic and cook it gently for 1 minute until fragrant but not browned. Add the crushed tomatoes, red pepper flakes and a pinch of the salt, then simmer for 15 minutes until thickened. Stir in the basil at the end and keep warm.
1 tsp Salt, 1 tbsp Olive oil, 3 clove Garlic, 1 cup Crushed tomatoes, 0.2 tsp Red pepper flakes, 6 piece Fresh basil leaves
  2. Prepare the Cutlets
    2. Slice each chicken breast in half horizontally, then pound between sheets of plastic wrap to an even 1.5 cm (1/2 inch) thickness. Pat dry and season both sides with the remaining salt and the black pepper.
2 piece Chicken breast, boneless skinless, 1 tsp Salt, 0.5 tsp Black pepper
  3. 3. Set up three shallow dishes: flour in the first, egg whisked with milk in the second, and panko mixed with Parmigiano-Reggiano and oregano in the third. Dredge each cutlet in flour, dip in egg, then press firmly into the crumbs. Rest on a rack in the fridge for 10 minutes so the coating sets.
0.2 cup All-purpose flour, 1 piece Egg, 1 tbsp Milk, 0.8 cup Panko breadcrumbs, 0.2 cup Parmigiano-Reggiano, finely grated, 0.5 tsp Dried oregano
  4. Fry and Bake
    4. Preheat the oven to 220°C (425°F) with the broiler element on if available. Heat the neutral oil in a large oven-safe skillet over medium-high heat to 175°C (350°F). Fry the cutlets in batches for 3 minutes per side until deep golden, then drain on a wire rack.
0.8 cup Neutral oil for shallow frying
  5. 5. Place the cutlets on a baking sheet. Spoon a little tomato sauce over the center of each, leaving the edges bare to stay crisp, and top with mozzarella. Bake for 6 to 8 minutes until the cheese is melted and bubbling.
    4 oz Fresh mozzarella, sliced
  6. Pasta and Serve
    6. Meanwhile, boil the spaghetti in well-salted water until al dente, reserving a splash of pasta water before draining. Toss the pasta with a few spoonfuls of the remaining tomato sauce and a splash of pasta water until lightly coated.
1 tsp Salt, 3 oz Spaghetti
  7. 7. Serve the cutlets alongside the pasta with any remaining sauce spooned around and extra basil if desired.
    6 piece Fresh basil leaves
