Prep
1. Heat the oven to 350°F and grease a 9 x 5-inch loaf pan.
Batter
2. Mash the ripe bananas in a large bowl until mostly smooth. Whisk in the unsalted butter, granulated sugar, light brown sugar, plain Greek yogurt, eggs, and vanilla extract until combined.
3 piece ripe bananas,
0.5 cup unsalted butter,
0.8 cup granulated sugar,
0.2 cup light brown sugar,
0.5 cup plain Greek yogurt,
2 piece eggs,
1 tsp vanilla extract
3. Add the all-purpose flour, baking soda, salt, and ground cinnamon. Fold gently just until no dry streaks remain.
4. Fold in most of the semi-sweet chocolate chips, reserving a small handful for the top.
1 cup semi-sweet chocolate chips
Bake
5. Scrape the batter into the loaf pan and sprinkle the remaining semi-sweet chocolate chips over the top. Bake for 55 to 65 minutes, until deeply golden and a tester inserted in the center comes out with a few moist crumbs but no wet batter.
Cool
6. Cool in the pan for 10 minutes, then transfer the loaf to a rack and cool completely before slicing.
