Build the Cocktail
1. Chill a coupe or rocks glass by filling it with ice water and setting it aside while you mix.
2. Add mezcal, fresh pineapple juice, fresh lime juice, and agave syrup to a cocktail shaker filled with ice.
2 oz Mezcal,
1.5 oz Fresh pineapple juice,
0.8 oz Fresh lime juice,
0.5 oz Agave syrup,
1 cup Ice
3. Seal the shaker and shake hard for 12–15 seconds until the tin is painfully cold and well-frosted on the outside.
4. Discard the ice water from your chilled glass, then strain the cocktail into it.
The Sunset Effect
5. Slowly drizzle grenadine around the inside edge of the glass — it will sink through the golden drink and bloom upward in a deep red-orange gradient, creating the sunset effect. Do not stir.
0.2 oz Grenadine
6. Garnish the rim with a pineapple wedge and a dehydrated lime wheel, and serve immediately.
