Make Meatballs
1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment. In a large bowl, combine the ground turkey, Italian seasoning, garlic powder, black pepper, salt and egg. Mix gently until just combined to keep the meatballs tender.
2. Roll the mixture into about 20 meatballs, each roughly 4 cm (1.5 inches) wide, and place them on the baking sheet. Brush or drizzle lightly with olive oil.

3. Bake for 18 to 20 minutes, until golden and cooked through to an internal temperature of 74°C (165°F).
Sauté Spinach
4. While the meatballs bake, thinly slice the garlic. Heat the olive oil in a large skillet or pot over medium heat, then add the garlic and red pepper flakes and cook for 30 seconds until fragrant.
5. Add the spinach in handfuls, tossing as each batch wilts. Cook for 3 to 4 minutes total until tender, then season with the remaining salt and lemon juice.
