  1. Make Meatballs
    1. Mince 2 of the garlic cloves. In a large bowl, gently combine the ground turkey, egg, almond flour, the first portion of Parmigiano-Reggiano, minced garlic, dried oregano, parsley, 1 tsp of the sea salt and the black pepper until just mixed. Roll into 16 meatballs.
    1.2 lb Ground turkey, 1 piece Egg, 0.3 cup Almond flour, 0.5 cup Parmigiano-Reggiano, finely grated, 2 clove Garlic, 1 tsp Dried oregano, 3 tbsp Fresh parsley, chopped, 1 tsp Fine sea salt, 0.8 tsp Black pepper
  2. 2. Heat the olive oil in a large deep skillet over medium-high heat. Brown the meatballs in batches for 2 to 3 minutes per side until golden, then transfer to a plate. They will not be cooked through yet.
    3 tbsp Extra virgin olive oil
  3. Tomato Sauce
    3. Lower the heat to medium and sauté the onion in the same skillet for 4 minutes until soft. Mince the remaining 2 garlic cloves and stir in with the red pepper flakes for 30 seconds until fragrant.

  4. 4. Add the crushed tomatoes and 0.5 tsp of the salt, scraping up the browned bits. Return the meatballs to the sauce, cover partially and simmer gently for 15 to 18 minutes until the meatballs reach 165°F (74°C) inside. Tear in the basil leaves at the end.

  5. Creamy Polenta
    5. While the meatballs simmer, bring the gluten-free chicken broth to a boil in a medium pot. Slowly whisk in the polenta in a steady stream, then reduce the heat to low and cook, stirring often, for 5 to 8 minutes until thick and creamy.
    4 cup Gluten-free chicken broth (check label), 1 cup Quick-cook polenta (cornmeal, check label for gluten-free)
  6. 6. Off the heat, stir in the butter, the second portion of Parmigiano-Reggiano and the remaining 0.5 tsp salt. Add a splash of hot water if too thick.
    0.5 tsp Fine sea salt, 2 tbsp Unsalted butter, 0.5 cup Parmigiano-Reggiano, grated, for polenta
  7. Serve
    7. Spoon the polenta into warm bowls, top with the meatballs and sauce, and finish with a little extra Parmigiano-Reggiano if desired.
