Cook Pasta
1. Bring a large pot of salted water to a boil and cook the pasta 2 minutes short of package directions, so it stays firm for baking. Drain and set aside. Preheat the oven to 190°C (375°F).

Make Beef Sauce
2. Heat the olive oil in a large deep skillet over medium-high heat. Brown the ground beef for 6 to 8 minutes, breaking it up, until no pink remains.

3. Add the onion and cook 4 minutes until softened, then stir in the garlic and tomato paste and cook 1 to 2 minutes until the paste darkens.
4. Stir in the diced tomatoes, tomato sauce, beans, oregano, smoked paprika, salt and black pepper. Simmer 10 minutes until slightly thickened.

Assemble and Bake
5. Fold the pasta into the sauce, then spread half in a 9x13-inch baking dish. Sprinkle with half the Parmesan, add the remaining pasta mixture, then top with the remaining Parmesan and the mozzarella if using.

6. Cover with foil and bake 15 minutes, then uncover and bake 10 to 15 minutes more until bubbling and golden. Rest 10 minutes before serving.
