Sear the Steak
1. Freeze the sirloin steak for 15 minutes to firm it up, then slice it very thinly against the grain. Toss with salt and black pepper.
12 oz Sirloin steak,
1 tsp Salt,
0.5 tsp Black pepper
2. Heat half of the butter in a large pot over medium-high heat. Sear the steak slices in a single layer for 30-45 seconds per side until just browned, working in two batches if needed, then transfer to a plate.
1 tbsp Butter
Build the Soup
3. Add the remaining butter to the same pot over medium heat. Cook the mushrooms for 5-6 minutes until deeply golden and their liquid has evaporated.
1 tbsp Butter,
8 oz Cremini mushrooms, sliced
4. Stir in the onion and cook for 4 minutes until soft. Add the garlic and thyme and cook for 30 seconds until fragrant, then stir in the Worcestershire sauce, scraping up the browned bits from the bottom of the pot.
5. Whisk in the beef broth and condensed cream of mushroom soup until smooth. Add the rice, bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes until the rice is tender.
4 cup Beef broth,
1 can Condensed cream of mushroom soup,
0.5 cup Long-grain white rice, uncooked
Finish and Serve
6. Reduce the heat to low and stir in the half-and-half and the seared steak with any juices from the plate. Warm gently for 2 minutes without boiling so the steak stays tender. Taste and adjust the seasoning.
12 oz Sirloin steak,
0.5 cup Half-and-half
7. Ladle into warm bowls and garnish with fresh parsley.
2 tbsp Fresh parsley (garnish)
