    1. Cut away any bruised or browned parts from the nectarines, then dice the remaining fruit.

    2. Add the nectarines, sugar, lemon juice, vanilla extract, and salt to a small saucepan. Bring to a gentle simmer over medium heat.
    3 piece Nectarines, 0.2 cup Sugar, 1 tbsp Lemon juice, 0.5 tsp Vanilla extract, 1 pinch Salt
  3. 3. Cook for 10 to 15 minutes, stirring occasionally and pressing some of the fruit with a spoon, until the nectarines are soft and the mixture is thick and spoonable. Reduce the heat if it bubbles too hard.
  4. Serve
    4. Let the compote cool for 2 to 3 minutes so it stays warm but not scorching. Spoon the vanilla ice cream into bowls and top with the warm compote.
