1. Cut away any bruised or browned parts from the nectarines, then dice the remaining fruit.

2. Add the nectarines, sugar, lemon juice, vanilla extract, and salt to a small saucepan. Bring to a gentle simmer over medium heat.

Serve
4. Let the compote cool for 2 to 3 minutes so it stays warm but not scorching. Spoon the vanilla ice cream into bowls and top with the warm compote.
